MGM Chefs Visit KOTO
MGM GRAND Macau Chefs lead cooking course at KOTO

Ho Tram Project Company, in partnership with MGM MIRAGE, has brought two of Macau's leading chefs to Hanoi to lead a training program for culinary students from underprivileged backgrounds at Hanoi's Know One Teach One (KOTO) training facility in West Lake.
Two chefs from MGM GRAND Macau - French chef Antoine Perray and Vietnamese Chef Dao Thi Hong Trang led the training session in French cuisine over the course of three days, from 7 to 9 July 2009 at the KOTO Vocational Training Center.
The two-day course showcased a number of French dishes to help the 30 budding young chefs master new techniques and cuisines as they enter their professional lives. At the conclusion of the course, the students showcased their skills at a VIP reception held at KOTO’s Café Hideaway.
Bonding over the three days, the 30 students and their two apron-clad masters were able to forge ties that transcended the language barriers that occasionally separated them. With the time spent learning about, cooking, and enjoying, a number of French delicacies cultures were crossed, boundaries were blurred, and valuable culinary and cultural knowledge was gained by all.
KOTO is the abbreviation of Know One Teach One. KOTO is recognised for its dynamic restaurant and its effective grassroots development project that is breaking the cycle of poverty amongst street and disadvantaged youth in Vietnam. The young people, in the two year, internationally accredited KOTO program, study hospitality skills and English, and take part in an essential life skills program. They gain practical skills working at the KOTO restaurant.
